The Fieldens brought Executive Chef Oliver Zulauf – who has worked in top restaurants throughout Switzerland and Canada – on board with the Rocky Mountain Flatbread Company to use an integration of fine dining principles to create delicious and nutritious pizzas.
Chef Zulauf is involved in developing relationships with local organic farmers (he is dedicated to using local organic produce, local free range meats an Ocean Wise seafood); creating a family friendly restaurant design; and forging environmental alliances to allow their operations to be carbon neutral.
Located on West 1st Avenue & Cypress Street, and open for breakfast, lunch and dinner, we visited Rocky Mountain’s Kits location for a late lunch/early dinner and ordered a couple pizzas and salad with flatbread to go off their lunch menu.
All of their salads are finished with house made salad dressings which are sweetened with natural honey, topped with seasonal sprouts & served with a side of fresh organic flatbread. Our flatbread was gently warmed, which was a nice touch.
We ordered the Honey Dijon Peppercorn Salad (regular $8.25/ large $12.25) – This regular sized salad included fresh organic greens with jicama root, marinated cherry tomatoes, green peppers in a dijon mustard, black pepper lemon vinaigrette & topped with asiago cheese. The crisp jicama root gave the salad a lovely bite, which balanced nicely with the sweetness of the cherry tomatoes.
All of their flatbread pizzas include handcrafted organic flatbread base topped with garlic oil, organic tomato sauce & mozzarella cheese. They then add favourite wholesome ingredients and bake it in their artisan oven. Rocky Mountain Flatbread Company’s house made pesto is nut and dairy free, and another nice feature is for their large pizzas you can ask for half n’ half varieties. Pictured above is the Ranchers Choice ($9.95) – This delicious flatbread pizza included delectable toppings of certified organic spicy beef, sulphate free Italian sausage, sliced green peppers, sweet red onions & creamy goat’s cheese.
Spicy Pepperoni ($9.95) – Another tasty flatbread pizza, this one included organic nitrate free beef pepperoni with brown mushrooms & fresh chopped herbs. Both pizzas were delicious and nutritious! For an extra four dollars, you can order your pizza with a gluten free crust. The gluten free crust has a base of tomato sauce & mozzarella (unless specified), and the crust is made with a blend of brown rice flour, tapioca, buckwheat, potato flour, biodynamic eggs & filtered water.
